For this first edition, here are previews from the Hawai‘i Food & Wine Festival. First, from the Under the Modern Moon: Morimoto & Friends event—Cocktails by Tony Abou-Ganim and Julie Reiner; Fried Chicken by Charles Phan; “Shrimp Cocktail” by Amber Lin; Macadamia Nut Honey Mousse by Stephen Durfee; ‘Ahi Tartare with Quail Egg by Floyd Cardoz; Pork Belly Lettuce Wraps by Masaharu Morimoto.
And from the Sweet Endings, Sweet Wine seminar with Pastry Chefs Christina Tosi and Michelle Karr-Ueoka—Christina Tosi made and served up Cake Truffles; Michelle Karr-Ueoka served up her version of a Fudgesicle, with three chocolate preparations; the seminar also covered dessert wines and liqueurs.
